Linda Barker’s quick and healthy breakfast jar recipes

Want to send your kids to school or nursery on a hearty breakfast packed with nutrients? Linda Barker shares her quick and healthy summer fruit breakfast jar recipes with us.

Breakfast doesn’t have to be a chore – with a little preparation you can create a quick, easy and nutritious delight for your children before they head off to school.

As part of Wren Kitchens’ latest Little Kitchen campaign, Linda Barker, Creative Director of Wren Kitchens, shares her top two breakfast jar recipes. Linda says of the recipes:

“One thing I’ve learnt when trying to get kids to eat well is that they love anything they can do themselves and get really get stuck into.

These breakfast jars are so quick and easy and can be made up of pretty much any fruit, yoghurt and other ingredients you have in the fridge.

For the older kids, I love using mason jars as they can layer up brightly coloured ingredients to make it much more fun and attractive; as whether we like it or not, we all know kids eat with their eyes.

Another top tip is to prepare these the day before with added wholegrain oats, place them in the fridge overnight and in the morning, all the yummy flavours will infuse together to create a jar of wholesome goodness!”

Strawberry Parfait Breakfast Jar


  • 170g plain Greek yogurt
  • 75g granola
  • 250g strawberries
  • 2 tablespoons honey
  • 2 tablespoons desiccated coconut


  1. Preheat the oven to 350 degrees. Add strawberries into a mixing bowl and pour honey over them, mixing with your hands to fully coat the berries in the honey.
  2. Line a baking sheet with parchment paper and lay strawberries on it in a single layer. Bake for 20 minutes.
  3. Meanwhile, mix the desiccated coconut with the Greek yogurt.
  4. When strawberries are done roasting, begin to assemble your parfait.
  5. Add a layer of the coconut yogurt, top with granola and roasted strawberries, and repeat these steps.
  6. Top with a spoonful of syrup from the pan of roasted strawberries and a sprinkle of coconut.

Blueberry and Peach Parfait


  • 170g plain Greek yogurt
  • 75g granola
  • 1 peach, diced
  • Handful of blueberries
  • Honey and chopped walnuts (to garnish, but you can use an alternative nut or leave it)


  1. Layer yogurt onto the bottom of a mason jar.
  2. Pour half the granola mixture onto the yogurt and layer half the peach pieces on top of the granola.
  3. Add a few blueberries and repeat the steps once more.
  4. Top with honey and walnuts.
